Blueberry Chia Pudding
This blueberry chia pudding is a fantastically healthy recipe option to serve up as a dessert or to even eat as a snack or breakfast on the run option. If you store in jam jars then it’s an easy breakfast option to throw in your bag and take to work with you if you are running short on time.
Method:
Really simple and easy to make. I used the blender to blend in the blueberries, however if you are short on time you can just throw in a bowl and give it a good mix. Then leave in the fridge for a couple of hours to allow the chia seeds to expand and soak. Add some berries on top before serving if you want to make it look pretty.
Ingredients serves 2:
- 1 1/2 cups of almond milk/coconut milk or cashew milk, which ever you prefer.
- 1/2 cup of chia seeds, I mix white and black seeds together
- 1/2 tsp of organic vanilla essence
- 1/4 cup of blueberries and some to leave on the top for decoration.
