Ingredients:
- ½ cup rice flour
- ½ cup almond meal
- ¼ tsp bicarbonate of soda
- ½ grated zucchini or 1 small one
- ½ cup chopped semi-sun-dried tomatoes
- ¼ cup diced ham
- ½ tsp apple cider vinegar
- 3 free-range eggs
- 2 tsp pepitas
Method:
- Preheat oven to 160°C
- Whisk the eggs and then add the zucchini, sun-dried tomatoes, ham, apple cider vinegar, and half of the pepitas and stir until well combined
- Add the dry ingredients, mix well and then place in a baking tin lined with baking paper or Muffin Tins. Sprinkle the remainder of the pepitas on top
- Place in oven for 30-40 mins or until a skewer comes out clean when inserted into the center.
