Easy to Cook Vegetarian Lasagne Recipe

Not keen on meat or want a healthier option than a traditional lasagne, then try my vegetarian lasagne. A fusion of fresh veggies to help with healthy eating and getting your 5 serves of veg in each day.  But also some yummy cheese. Below you will find the best Vegetarian Lasagne recipe. 

Vegetarian Lasagne Recipe

Ingredients

  • 2 medium eggplants, sliced into circles about 4mm thick
  • ½ brown onion, chopped 
  • 1 garlic clove, crushed 
  • 2 zucchinis, sliced 
  • 1 small red capsicum, chopped 
  • 1 green capsicum, chopped 
  • 1 sweet potato, finely sliced or grated
  • 2 cups baby spinach, roughly chopped 
  • 1 tbsp coconut oil 
  • 1 tbsp tomato paste 
  • 400g chopped tomatoes (can) 
  • 2 tbsp chopped fresh basil 
  • 360g ricotta 
  • 20g parmesan 
  • ¼ tsp nutmeg 
  • ½ cup grated mozzarella 
  • 2 x cups rocket leaves

How to Cook Vegetarian Lasagne?

  1. Preheat the oven to 220°C. 
  2. Place the eggplant onto a non-stick baking tray and place it in the oven. Cook for 3-5 mins on each side or until they are starting to get soft. A place to one side. 
  3. Place the oil in a large saucepan on medium heat and add the onion and garlic; stir for 1-2 minutes, then add the sweet potato, capsicums, and zucchini (or whatever veggies you have chosen). Stir for 6 minutes or until softened.
  4. Add the tomato paste, chopped tinned tomatoes, and basil, and cook for a further 5 minutes.
  5. Meanwhile, place the ricotta, spinach, nutmeg, and parmesan into a bowl and mix well.
  6. Spread a ¼ of the tomato/veg mix over the bottom of a 9 x 13 ovenproof dish. Top with a layer of eggplant circles. Cut them to fit the sides.
  7. Top with ½ of cheese/spinach and another ½ of the remaining tomato/veg mix before adding another layer of eggplant.
  8. Top with the remaining tomato/veg mix and finish with the cheese/spinach being the last layer. Then top with the mozzarella. 
  9. Cover with foil and bake for 25 minutes. 
  10. Remove the foil and cook uncovered for a further 10 minutes to allow the top to golden and the cheese to melt.
  11. Serve with rocket.
