Gluten free Mediterranean Loaf
I always get asked for healthy snack or breakfast ideas, this is one that I would recommend.
A great alternative to sugar laden cereals and a filling snack during the day.
Ingredients and Directions
- 1 cup rice flour
- 1 cup almond meal
- 1/2 tsp bicarbonate of soda
- 1 grated zucchini or 2 small ones
- 1/2 cup chopped semi sun-dried tomatoes
- 1/2 cup diced ham
- 1 teaspoon apple cider vinegar
- 5 eggs
- 4 tbsp pepitas
Preheat oven to 160 degrees
Whisk the eggs and then add the zucchini, sun-dried tomatoes, ham, apple cider vinegar and half of the pepitas and stir until well combined.
Add the dry ingredients, mix well and then place in a baking tin lined with baking paper. Sprinkle remainder of pepitas on top.
Place in oven for 30-40 mins or until a skewer comes out clean when inserted into the centre.
Remove from tin and allow to cool.
If you want to save some for later then pre-slice and freeze. Toasted with some butter or coconut butter is delicious.
A square tin would possibly be more ideal for slicing however I love eating big chunks like the picture.
